Pulao - A rice dish prepared by cooking rice in stock or broth flavored with spices and vegetables.
Dry-Fruit Pulao is my mother's signature dish. Every occasion, be it diwali dinner or just casual family get-together this famous Pulao has marked it's presence in every Celebration of our family. This flavourful pulao is one of the easiest things you can make and impress everyone around. The combination of spices and cashews are a match made in heaven. The slight sweet taste of raisins, the crunch from the cashews, soft rice melting in the mouth, it just feels divine.
Here's her secret to the amazing pulao...!!!
Pro-Tip : Remember to soak the rice 1-1 1/2 hours before making this pulao. And, yes don't forget to add some of the secret ingredient - "Love".
Ingredients -
1 Cup Soaked Basmati Rice
1 3/4 Cups water
1/8 Cup Cashew broken in two
1 tbsp Raisins
1/2 tsp Black Pepper powder
1/2 tsp Garam Masala
3 Bayleaf (tejpatta)
7-8 Clove
12- Black Peppercorns
1 Black Cardamom(Badi Elaichi)
1 Star anise
Salt to taste
1 tbsp Ghee(clarified Butter)
Instructions -
Heat a pressure cooker and add 1 tbsp ghee. Once the ghee is hot add jeera and let it sizzle for a few seconds. Now, add clove, black-peppercorns, star anise ,bayleaf and black cardamom and saute till they turn aromatic.
Once the spices turn aromatic, add the cashews and saute till they turn golden in colour. Now is the time to add raisins. Saute for a minute or till the raisins swell up a bit. Add the garam masala and black pepper powder and saute for a minute.
Time to add the soaked rice and water. Stir until everything is mixed well. Add salt and mix again. Pressure cook on medium flame for one whistle, then cook on low flame for another 5 minutes.
Switch off the stove. Pulao is ready.Let the cooker release the pressure before opening the lid. Serve hot.
