Paneer - It is a fresh Cheese made in Indian subcontinent made by curdling milk with a fruit or vegetable base acid. It is then pressed for sometime to form a block. Very popular throughout the country it is used to make savory and sweet dishes.

Since Paneer is usually made plain and has no flavouring. Let's twist the traditional way of making Paneer and infuse some flavours while making this super soft Indian Cheese.

Let's get cooking.

Home-made Herbed Paneer flavored using chilli flakes, oregano, coriander and salt.

Ingredients -

  • 1 Litre - Milk

  • Juice of 1 Lemon

  • 1 1/2 tsp - Oregano

  • 1 tsp - Chilli Flakes

  • 2 tbsp - Coriander leaves

  • Salt to taste

Instructions -

  • Take a litre of milk and bring it to a boil. Once the milk is boiled, add juice from one lemon and stir well. Cover with lid and let sit for 30 minutes.

  • After 30 minutes switch on the flame and boil again. The milk will curdle and separate from whey. Remove around 1 cup of whey and add the oregano, chilli flakes, coriander leaves and salt and stir again.

  • Remove from flame and strain over a sieve or muslin cloth.Pour a glass of cold water to wash off the acid from the lemon. Crumble the chhena and mix everything well again.Adjust the salt and let the excess whey stain.

  • Once the whey has drained completely wrap in the muslin cloth and keep something heavy on top to set paneer. Let it stay in this position for an hour. Remove from the cloth and cut in desired shape, and use in any recipe or savour as is.

Pro - Tip : Add lemon juice or 1/2 tsp of citric acid for milk to curdle. Crumble the chhena well to mix the herbs well before pressing.

This is a very quick and simple recipe. You can add the spices of your choice, we have used the ones that were available at home. You can altogether change the flavour of paneer by replacing the spices. The possibilities are endless.
