Tacos - A traditional mexican dish made by filling corn o wheat tortillas with salad. These easy to pick and eat Tacos are very delicious and can be made with a variety of fillings.
Since tortillas are quite similar to our Indian flatbreads - roti/chapati. WE used our leftover rotis to make these flavourful pick me up Tacos.

Tacos made using the leftover rotis.
Ingredients -
4-5 Leftover Roti/Parathas
1 Onion - Chopped
1 Capsicum - Chopped
1 Tomato - Chopped(de-seeded)
100 gms - Paneer cut in cubes
1/2 tbsp - Oil
1/2 tsp - Chilli flakes
1/2 tsp - Black pepper
1/2 tsp - Piri piri Masala
1 tbsp - Mint Chutney
1 tbsp - Chilli Sauce
3 tbsp - Cream cheese
Salt to taste
Instructions -
For Taco Shells -
Take the chapatis and hang them on the grill of the oven looping in alternate partitions. Bake at 150 degrees for around 5-7 minutes.
For Filling -
In a pan heat some oil and add sliced onions and saute for a minute. Add capscicum and cook for another minute.
Add in the chopped paner cubes and black peper powder, chilli flakes , piri piri and salt.Mix well and remove from stove.Now add sliced tomatoes.
For Dips -
In a bowl add 1 tbsp crem cheesea and mint chutney and stir well.Mint dip is ready.
In another bowl add chilli sauce and 1 tbsp cream cheese and stir well to get the chilli dip.
Assembling -
Take a taco shell and spread some cream cheese at the bottom. Now fill it with 2-3 spoonfuls of salad. Top the salad with dip of your choice and done.
If you do not have an oven, spread some cream cheese on a roti and spoon the salad on half of the roti. Now fold over the other half. Saute in medium flame with some oil on both sides until crisp and you are done.
Leftover Rotis used to make the Tacos.
Pro - Tip : Do not cook the vegetables completely. We want them nice and crunchy.In case of non-availability of an oven, saute the Tacos on a grill pan or tawa with some oil or ghee to get the crisp shell.
This is a very quick and simple recipe. You can add the vegetables and cheeses of your choice we have used the ones that were available at home. You can altogether skip the step of pan frying the vegetables and use raw. I like them slightly cooked.
